Baked Scotch Egg Bites with Dijon Sauce


I don’t know about you, but after all the delicious sweets from the holidays, I am craving something hearty! I get a little sugared out after Christmas. I made cookies, fudge, and divinity with my mom and daughter before Christmas and ate more than my share of them! Once I feel like eating cookies again, I’ll have to share this perfect sprinkle cookie recipe I found! But for now, something salty sounds great.

This is a twist on traditional Scotch egg recipes! Great for appetizers. Skip the deep frying and make these in the oven!

Sausage Layer
 1 lb Sausage
 ½ cup Bread Crumbs
 1 Egg
 ½ Minced Onion
 2 tbsp Milk
 1 tsp Garlic Powder
 ½ tsp Salt
 ¼ tsp pepper
 2 tbsp Mustard
 1 tbsp Worcestershire Sauce
Hard Boiled Eggs
 6 Hard Boiled and Peeled Eggs, chopped
Dijon Sauce
 ¼ cup Dijon Mustard
 ¼ cup Melted Butter
 1 tsp Dried Thyme
  cup Milk
 1 tsp Sugar
 ¼ tsp Salt
  tsp pepper
Topping
 ¼ cup Melted Butter
 ½ cup Bread Crumbs

Sausage Layer

1. Preheat oven to 400 Degrees Fahrenheit. Spray a thin layer of non-stick cooking spray on a muffin tin or individual brownie pan.
2. Use your hands to mix the ingredients for the sausage layer. Once everything is mixed, pat the sausage into each cup, building up the sides slightly so that it makes a small depression in the middle of the patty.
3. Bake in the oven for 25 minutes or until the sausage is cooked through.

Egg Layer and Topping

1. Mix ingredients for Dijon mustard sauce.
2. Place chopped eggs on top of cooked sausage patties.
3. Spoon Dijon sauce on top of eggs.
4. Mix bread crumbs and melted butter to make the topping.

Finishing it off!

1. Switch oven to broil.
2. Sprinkle bread crumb mixture on top of each Scotch egg bite.
3. Put under the broiler for about 4 minutes, or until bread crumbs get crispy.
4. Serve hot!
